You know those long hot days when the sun beats down on your skin, the air is hot, you can see the heatwaves across the field. You know that when lunch comes, there will be something to quench that heat that is engulfing your whole body, every breath. Any chance of a slight breeze is welcome because it’s a moment of reprieve from the relentless shining from the sky.
When that rest comes, you find a shading patch to rest in, the perfect thing you could have in your hand, could be this drink right here. Packed with electrolytes and cooling mint to quench that heat in your body. I came up with this one afternoon when water just wasn’t feeding that thirst. It is a favourite for me and one I will keep forever and I’m sure change and enhance along the way. Something I love about recipes is how anyone can make it their own. And I encourage you to do the same! As one of my favourite authors says: “Make it once from the recipe, make it again from memory and after that, make it your own”. Meaning add to it, take away, make it your signature beverage that you share on a holiday. Or whatever you like! So here you go, the first step, to making it your own.
Summer Watermelon Refresher
serves 2
1/3 water melon
6-10 mint leaves
1-3 Tablespoons lemon juice
1/2 cup frozen strawberries
1/3 cup water
pinch of sea salt
1 can club soda OR watermelon flavoured bublé
Scoop watermelon out of shell and place in blender, followed by other ingredients excluding the club soda.
blend until smooth and not chunks can be detected. I use strawberries for their sweetness and also because they’re frozen. But if it were a really hot day, I would have also cubed the watermelon and frozen it as well and used slightly more water. You can use fresh strawberries and well and puree it. Raspberries would be a lovely addition as well. You could also use ice cubes which I did not have at the time.
Once the fruit puree is blended, you can decide whether you want the pulp, if you don’t, strain it before you would add any ice. Add to a pitcher, pour in club soda or bublé! Garnish with a slice of watermelon, strawberry, Rasberry (if used) and some mint leaves.
This refresher will quench your thirst like no other!
